ingredients
- 16-18 oz (225g) pasta shells
- 1 tablespoon butter
- ¼ cup parmesan cheese
- Basil, chopped, to serve
- Salt and pepper to taste
- ¼ cup olive oil
- 1 small clove of garlic, diced
- 1 small shallot, diced
- ¼ cup tomato paste
- ½ cup heavy cream
- 1 tablespoon vodka
- 1 teaspoon red pepper flakes
Introduction
- First, take out a large saucepan, add the olive oil, and heat it over medium heat. Then, when the oil's hot, add the garlic and shallot to the pan and cook for about 7 minutes - or until soft.
- Next, add the tomato paste to the pan of softened garlic and shallots. And once the tomato paste darkens in color, you can add heavy cream to the pan.
- Now that you have the base of the sauce, pour the vodka in and let everything cook until the vodka evaporates.
- After it cooks through, add the red pepper flakes to the sauce and stir until everything is fully combined. Then, sprinkle your desired amount of salt and pepper in, give it another stir, and remove the sauce from the heat.
- Now, when the sauce melds all of the flavors together, you can make the pasta.
- Boil a pot of water, add some salt to it, and cook the pasta according to the package directions. I used shells, but any pasta will work just as well in this recipe!
- Once the pasta is cooked, drain and remove from heat, setting aside ½ cup of the pasta water for later.
- Now put the pan with the sauce in it back on medium heat, add the butter, and stir until it melts.
- Once it has been incorporated and fully melts, add the cooked pasta to the sauce and the reserve pasta water.
- Then, add the parmesan cheese, some salt & pepper to taste, and stir the shells to immerse them in the vodka sauce.
- Lastly, serve the pasta with some more parmesan cheese sprinkled on top, a couple of basil leaves, and enjoy!
